Today is National Peach Cobbler Day!

To celebrate, we'll share with you Regena's personal recipe:

Regena’s Peach Cobbler

2 cups of sliced fresh peaches  
¼ teaspoon of nutmeg
2 cups of sugar (divided)
½ cup of butter (not margarine)
¾ cup of flour
2 teaspoons of baking powder
A pinch of salt
¾ cup of milk
 
Heat oven to 350º.  Mix the peaches with 1 cup of sugar and nutmeg then set aside.  Put the butter in a 9” square cake pan or preferably a medium cast iron skillet and put in the oven to melt.  In a mixing bowl, combine 1 cup of sugar, flour, baking powder, salt and milk.  Mix until smooth.  Pour this over the melted butter.  DO NOT STIR!  Top this with the peaches and again -DO NOT STIR!  It is key that you do not mix any of the layers together.  The batter will rise to the top during baking.    
Put in the oven and bake at 350º for about an hour or until golden brown.  Serve with some homemade vanilla ice cream or some fresh whipped cream.
